- 3 small flour tortillas.
- 2 eggs.
- 2 slices thick cut bacon.
- 1/4 cup grated cheddar cheese.
Step by step how to cook Breakfast Taquitos:
- Heat tortillas in a medium hot skillet, keep warm..
- Cook bacon in a skillet over medium high heat until crisp. Drain onto paper towels. Crumble bacon into chunks.
- Break eggs into a small bowl and whisk. Pour beaten eggs into a small skillet. When eggs are just scrambled, add in cheese and crumbled eggs. Continue to scramble until eggs are fully cooked..
- Generously spray a skillet with cooking spray. Set over medium high heat. Place warm tortilla on a cutting board. Put 1/3 of egg mixture onto the bottom of the tortilla. Tightly roll the tortilla from bottom to top, forming a taquito. As you approach the top of the tortilla, spray with cooking spray, and seal the seam of the taquito with cooking spray.
