Ingredients for Stuffed Bell Peppers:

  1. (1) Onion, diced.
  2. (5) Garlic cloves, minced.
  3. (5) Tbsp chili powder.
  4. (2) Tbsp vegetable oil.
  5. (4) Large Bell Peppers, mixed colors.
  6. (2) slices White sandwich bread, torn into pieces.
  7. (1/2) cup milk.
  8. (1) lb ground chuck, browned.
  9. (1) cup corn, can or frozen.
  10. (2) cups shredded cheese, Jack and Colby.
  11. (1 1/2) cup cooked rice.
  12. (2) Tbsp minced canned chipotle chilie in adobo sauce.
  13. (3) tsp salt.
  14. (1) tsp pepper.
  15. (6) Tbsp minced fresh cilantro.
  16. (1) Green onion, chopped.

Step by step how to cook Stuffed Bell Peppers:

  1. Microwave onion, garlic, chili powder, and oil in a bowl, stirring occasionally, until onion is softened, about 3 minutes..
  2. Cut top 1/2 inch off each pepper, removing core and seeds..
  3. Save 3 of the pepper tops. Chop finely, discarding stems..
  4. Mash bread and milk into paste in large bowl..
  5. Mix in onion mixture, chopped pepper tops, ground chuck, corn, 1 cup cheese, cooked rice, chipotle, salt & pepper..
  6. Mix together with gloved hands until well incorporated..
  7. Stuff meat mixture into peppers.
  8. Place 1/3 cup water in slow cooker..
  9. Place stuffed peppers upright in cooker..
  10. Cover and cook 4-6 hours on LOW until fully cooked..
  11. Add additional cheese and green onion to the top the last hour or so of cooking..
  12. Gently lift peppers from cooker with tongs or slotted spoon, and transfer to a serving plate..
  13. Enjoy.
