  1. 2 whole medium sized Seabass gutted & washed.
  2. 1 red chilli finely sliced.
  3. 1 thumb size piece of fresh ginger finely sliced.
  4. 2 cloves garlic finely sliced.
  5. 1 lime finely sliced.
  6. 6 Basil leaves.
  7. 4 Sprigs Thyme.
  8. Handful Lemon Verbena.
  9. Olive oil.
  10. 1 lemon.
  11. S&P.
  12. Sprigs Dill to decorate & flavour.

  1. Wash fish. Score each side with a sharp knife 4 or 5 times. Season with S&P. Toss all ingredients around the fish covering as much as possible.....
  2. Place fish on parchment paper. Drizzle fish with olive oil & lemon juice. Place one more piece of paper on top. Fold sides inwards to fold an airtight parcel..
  3. Bake in a hot oven for 20/25 mins. Serve with the cooking liquor.
