Ingredients for Spanish Rice:

  1. 2 Cups uncooked white rice.
  2. 2 Cups chicken broth.
  3. 2 tablespoons olive oil.
  4. 2-14.5 oz. cans stewed or diced tomatoes.
  5. 1/4 large onion diced.
  6. 1 hint of garlic.

Step by step how to cook Spanish Rice:

  1. Place oil in pan and heat. I use an 8 qt. kettle or 3 qt. skillet. (You will need a lid).
  2. Brown rice well in pan while stirring. After the rice has browned, stir in your diced onion and garlic. Saute for a minute..
  3. Add 1 can of tomatoes and all of chicken broth to rice. Stir. Cover. Let simmer for 20 minutes..
  4. Uncover and stir in 2nd can of tomatoes while rice is still hot..
  5. Season to your liking with salt and pepper. Rice should be firm, but not dry..
  6. OPTIONAL: I like to add one 14oz can of black beans at the very last that have been rinsed with warm water..
