Ingredients for Roasted Brinjal veggie:

  1. 1 big brinjal.
  2. 1 chopped onion.
  3. 1 chopped tomatoes.
  4. 1 tsp chilli ginger garlic paste.
  5. 1/2 tsp Maggie masala magic.
  6. 1/2 tsp garam masala.
  7. 1 tsp cumin and mustard seeds.
  8. 1/2 tsp asafetida.
  9. As required Oil.
  10. To taste Salt.

Step by step how to cook Roasted Brinjal veggie:

  1. First apply oil to kadhai and cut brinjal into pieces and roast it by covering lid... when brinjal gets roasted remove the skin and mashed with hands and keep aside...
  2. Heat oil in pan add asafetida cumin and mustard seeds.. add chopped onion and roast till it turns soft now add chilli, ginger, garlic paste and dry masala and cook it till it leaves oil...
  3. Now add tomatoes and cook till it softens.. add salt and water and boil it....
  4. After it boils now add mashed brinjal and cook for 10 minutes...serve hot with paratha baati or rice.
