Ingredients for Northern Nigerian Moringa Salad:
- 10 hand full moringa leaves (fresh).
- 5 tablespoons kuli kuli Powder (groundnut cake powder).
- 1 medium onion.
- 2 tablespoons oil.
- 1 egg (optional).
- 2 tomatoes.
- 1 Maggi (stock cube).
- 1 teaspoon yaji (ground chili pepper).
- 1 atarugu (scotch bonnet pepper) for garnishing.
Step by step how to cook Northern Nigerian Moringa Salad:
- Pluck leaves from stalk. Don't worry if a little stalk remain behind.
- Boil for about 20 minutes or until tender. But don't let it over cook (get too soft) so as to still retain its medicinal value. And drain in a colander.
- Mix all ingredients together after dicing onion and tomatoes.
