Ingredients for Frozen Pea and Spinach Soup:

  1. 1 white onion.
  2. 1 tablespoon butter.
  3. 4 cups frozen peas, ideally petit pois (600g).
  4. 2 veg stock cubes.
  5. Optional 1 large handful of spinach.
  6. 1/4 cup milk.
  7. Salt and pepper.

  1. Chop the onion and sauté in the butter over a medium until translucent, then crumble in the stock cubes and mix..
  2. OPTIONAL Whilst the onion is sautéing, blend the spinach with 400ml of water [using a smoothie machine] to make a spinach water, otherwise use 550ml of water..
  3. Pour the peas and blended spinach water (or 550ml of water) and simmer for 5 minutes or until the peas are cooked..
  4. Blend the soup until smooth, mixing in the milk and seasoning with salt and pepper..
  5. Serve with fresh bread and optionally a ribbon of cream or yoghurt..
