- 1 white onion.
- 1 tablespoon butter.
- 4 cups frozen peas, ideally petit pois (600g).
- 2 veg stock cubes.
- Optional 1 large handful of spinach.
- 1/4 cup milk.
- Salt and pepper.
Step by step how to cook Frozen Pea and Spinach Soup:
- Chop the onion and sauté in the butter over a medium until translucent, then crumble in the stock cubes and mix..
- OPTIONAL Whilst the onion is sautéing, blend the spinach with 400ml of water [using a smoothie machine] to make a spinach water, otherwise use 550ml of water..
- Pour the peas and blended spinach water (or 550ml of water) and simmer for 5 minutes or until the peas are cooked..
- Blend the soup until smooth, mixing in the milk and seasoning with salt and pepper..
- Serve with fresh bread and optionally a ribbon of cream or yoghurt..
