Ingredients for Mixed Veg Masala:

  1. 2 cups chopped veggies (potato, capsicum, cauliflower) carrots, beans.
  2. 2 tbsp boiled peas.
  3. 1 medium onion chopped.
  4. 2 tomatoes chopped.
  5. 1 tbsp chopped ginger.
  6. 2 tsp chopped garlic.
  7. 1 green chilli chopped.
  8. 2 tsp mustard oil.
  9. 1 tsp ghee.
  10. 1/3 tsp panch phoran.
  11. 1/3 tsp turmeric powder.
  12. 1/3 tsp Kashmiri red chilli powder.
  13. as needed Salt.
  14. 1 packet Maggie magic masala.
  15. 2 tbsp mustard oil to fry the chopped veggies.

Step by step how to cook Mixed Veg Masala:

  1. Heat 2 tbsp oil in a kadhai. Fry the chopped veggies one by one till crispy. In the same kadhai take the rest mustard oil and heat. Add the panch phoran and let it splutter. Add chopped onion and garlic, chopped chilli and saute till onions are translucent. Mix chopped ginger and saute for half minute. Add chopped tomato, turmeric powder, Kashmiri red chilli powder, salt and 1 tsp ghee. Cook till oil and ghee separate the cooked masala..
  2. Now mix the fried veggies, Maggie magic masala and 1/3 cup of water. Mix nicely, cover and cook for 2 minutes or till the beautiful aroma comes. The delicious curry is ready to serve. Enjoy with Roti /Parantha/Luchi. Thanks.
