  3. 1/4 small red onion, thinly sliced (you can use white or yellow if you don't have the red).
  4. 1-2 Tablespoons chopped fresh chilies (I like jalapeƱos or serranos.).
  5. 5-10 whole stems cilantro, chopped.
  6. 1 Tablespoon soy sauce to start.
  7. 1/2 Tablespoon chili garlic paste to start (you can also use sriracha or sambal oelek).
